Eureka Pizza Dough:
1 package active dry yeast
2 teaspoons sugar
1 cup warm water (105 degrees F)
1/4 cup vegetable oil
3 1/2 cups bread flour (12% protein)
2 teaspoons sea salt
In a mixing bowl, combine yeast, sugar, water and vegetable oil. Add the flour and salt and mix, using a dough hook, until the dough comes away from the sides and moves up the dough hook (do not over mix- will make crust tough). Remove the dough. Oil the bowl with vegetable oil and put the dough back in the bowl. Cover the bowl and let the dough rise until doubled in size, about 1 hour or so. Turn the dough out onto a floured surface and divide dough in half. Roll the dough into balls, cover, and let the dough rest for 15 to 20 minutes. Yield 2 12” pizzas
Form into skin with raised edges (handle or crust edge) we use screens for our dough or a lightly oiled cookie sheet or pizza pan will work (no oil is needed if you use a screen for baking.)
Preheat Oven to 400 degrees F
Pesto (buy a quality brand like Villa Belmonte)
or make your own:
1/4 cup chopped fresh basil leaves
2 tablespoons toasted pine nuts
1 large garlic clove, finely chopped
Sea salt to taste
2 tablespoons Parmesan Cheese
2 tablespoons olive oil (virgin or extra virgin)
Fresh ground black pepper to taste
Spinach
1 cup (fresh- compacted in cup- or frozen)
If frozen- thaw- squeeze out as much water as possible
1/2 cup ricotta cheese
1/2 teaspoon granulated garlic
1/2 teaspoon fresh ground pepper
1/2 teaspoon Sea salt
Combine ingredients- mix well- do not over mix
And...
4 Roma Tomatoes- sliced approx. 1/3 inch thick
Cheese 7 ounces quality, shredded 100 % real mozzarella cheese
Pizza Assembly
Spread pesto on crust- 1/4- 1/3 cup- spread evenly
Place spinach on top of pesto- spinach/ricotta mix will be sticky- place evenly for best results. Place cheese on spinach- spread evenly- avoid crust handle
Place sliced Roma tomatoes evenly on top of cheese- bake at 400 degrees F until done (about 15 minutes or until cheese is brown and bubbly)
